This sustainable product helps to solve the protein challenge. Mycoprotein is a sustainable source of protein with a good protein quality.

The solution

Mycoprotein is derived from fungi. It is a sustainable protein source with a good quality (PDCAAS of 0.996), a low energy content and a high-fibre content. Eventhough this potential, mycoproteins are currently only commercially sold by "Quorn". This company uses the mycoproteins in meat replacers. However, according to literature the fungi might also have similarities to cereal. We want to focus on the application of mycoproteins in porridge. Porridge is a food product consumed in many countries, made out of cereal. It will be a sustainable product that helps to solve the protein challenge.
