The challenge
Fish waste in not used optimal. A big part of the fish is still waste, while it could be used as a source of protein.
The solution
Hydrolysate proteins change the structure of protein complexes into simpler amino acids that are easily absorbed by the body. In addition, protein hydrolyzates utilize fishery waste so that it is easier to obtain and if its produced into cheaper products. So it can be consumed by various groups. Amino acids in protein hydrolysates applied to biscuits can also give a characteristic savory taste so biscuits do not need special flavor because of the high glutamate content that gives a savory flavor.
