The challenge
Due to the burgeoning world population and on the other hand enhancing cost and confined supply of animal proteins, new sources of plant proteins for use in food applications, will need to be developed. Despite the great benefits of millet proteins in human utilization, it was not used in human nutrition, because of its functional properties.
The solution
so in our project we applied technologies that improved functional properties of millet protein and enhanced usability of these proteins in different food applications. so in this way it can be employed in human nutrition.
